CRUNCHY CRISPY CHICKPEAS:

Roasted Chickpeas makes such a great protein-packed vegan snack. You can enjoy them on their own or can be added in your favorite dishes for the crunchy crispy texture.

Ingredients:
2 cans chickpeas or 1 cup dried chickpeas (soak the chickpeas in the water overnight)
2 tablespoons olive oil
1 teaspoon smoked paprika powder
1 teaspoon garlic powder or cumin powder
1/2 teaspoon salt
How to make it Instructions:

Drain the canned chickpeas or the soaked overnight chickpeas, then rinse it thoroughly. Then dry them really well using a clean dish towel. Gently roll them while drying with a dish towel, as it removes chickpea skins that come off when drying (the drier the better, you could also use paper towel instead of dish towel).
Preheat your oven to 200°C and line a baking sheet. Spread the chickpeas in a single layer on the baking sheet. Roast in the oven for 15 minutes at 200°C.
After 15 minutes of baking, remove the chickpeas from the oven and in a medium bowl or on the baking sheet toss it with olive oil. Add the spices and toss well until the chickpeas are coated evenly and mix it well with the spatula.
Return them to the baking sheet, spread the chickpeas on the baking sheet and bake for 15 - 20 minutes at 200°C until they're browned and crunchy.
Then take the chickpeas out of the oven. Enjoy it when it's best to eat them while they're still warm.
*Adjust quantities according to taste preferences.
Notes:
It's important to dry the chickpeas as well as possible. This way they will become much crunchier. You could either use a clean dish towel or paper towel.
To keep chickpeas crispy and crunchy, they should be stored at a room temperature in a container without a sealed lid/with a loosely covered lid (it helps it stay crispier). When it is stored in an airtight container they will soften up and loose its crunchy texture. It will be fine on the counter for a week. They are delicious and addicting though!
