Indian Lemon Rice

Lemon rice is a delicious food prepared breakfast, lunch or any meal. This dish is filled with flavors, especially the tanginess in it.

This dish is popular in south India and known as Chitrannam, Nimakaya pulihora. Some people would prepare this dish if they had extra rice leftover from the previous meals or night. It is modified with few simple spices like the mustard seeds, turmeric, salt, along with few curry leaves, peanuts and obviously the lemon juice for that tangy flavor. After it's done you have this hot, tangy rice dish that’s ready in five minutes tops!


I would say if you have extra lemons, then for sure prepare this lemon rice and taste it. I am really fond of lemons and citruses. This lemon rice is one of my favorites as it is packed with the flavors especially the tanginess and the recipe is simple.


I can say this is healthy lemon rice, as it is prepared at home with the fresh and clean ingredients. I know it is prepared with white rice if you want it can be prepared with the brown rice too to make it more healthier.

Indian Lemon Rice

This dish is tangy, vibrant and packed with flavorus. It is modified with few simple spices like the mustard seeds, turmeric, salt, along with few curry leaves, peanuts and obviously the lemon juice for that tangy flavor. After it's done you have this hot, tangy, lemony rice dish that’s ready.


Servings: 3 to 4

Ingredients:

  • 1 cup Basmati long grain Rice

  • 1 tablespoon Oil

  • 1 teaspoon Mustard Seeds

  • 1 Green Chilli finely chopped (or Serrano Peppers)

  • 2 tablespoons Groundnuts

  • 12-15 Curry Leaves

  • 1/2 teaspoon Turmeric Powder

  • 3/4 teaspoon Salt

  • 2 1/2 tablespoon Lemon Juice


Instructions:

  1. Rinse rice 1 to 2 times with water. Then transfer the rinsed rice to a rice cooker and fill with 1.5 cups of water.

  2. Meanwhile take a pan and heat the oil. When the oil is little warm then add the mustard seeds be careful as it splutters. when it splutters reduce the heat and add the green chillies, curry leaves and peanuts. Now roast the peanuts slowly till it turns light golden brown.

  3. Then add the Turmeric and mix it well. After that turn off the heat.

  4. Once the rice is cooked, mix it from down to up with a spoon and let it cool down a little.

  5. Transfer the rice in the pan or the big bowl with the lemon juice and all the seasoning. Now mix it well from inside-out, up-down.

  6. Adjust salt and the lemon juice according to your taste at this point.

  7. Viola! Serve it hot in a bowl or plate.



NOTES:

  1. Cashews can also be added to this lemon rice for that extra crunchy taste.

  2. Hing (asafoetida) can be added too.

  3. If you want, you can add one tsp of Urad dal and one tsp of Chana dal along with the peanuts in the beginning.This makes the dish a little more crunchy and delicious texture too.
